Main Ingredients
400 g (about 1 lb) shrimp, peeled and deveined
2 tbsp extra virgin olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
2 cups fresh baby spinach
Juice of ½ lemon
½ tsp paprika
½ tsp red pepper flakes (optional for spice)
Salt & black pepper to taste
1 tbsp fresh parsley, chopped

✅ Step 1: Prepare the Shrimp
Pat shrimp dry with a paper towel.
Season lightly with salt, pepper, and paprika.
✅ Step 2: Sauté the Garlic
Heat olive oil in a large skillet over medium heat.
Add minced garlic and cook for 30 seconds until fragrant (don’t brown it).
✅ Step 3: Add Tomatoes
Add cherry tomatoes and cook for 2–3 minutes until they start to soften.
Season lightly with salt and pepper.
✅ Step 4: Cook the Shrimp
Add shrimp to the pan and cook for 1–2 minutes per side until pink and opaque.
Squeeze lemon juice over the shrimp.
✅ Step 5: Add Spinach
Toss in the spinach and stir until wilted (about 1–2 minutes).
Sprinkle with chopped parsley and a drizzle of olive oil.
✅ Step 6: Serve
Serve immediately with:
